Late one night, fire lit, bottle of yet-to-be-named Syrah and a big couch, a tiny black kitten arrived unannounced on our door step. We called her Dark Night.
From a mix of French clones, this Syrah was handled traditionally with cold soak before natural fermentation kicked off eventually building up to a strong, hot ferment.
Beautiful, lifted floral notes and a lovely punchy mouthful of fruit and earth. Bright and vibrant with aromas of raspberries, violets and nutmeg. Silky with great balance and a fine structure. Much like little Dark Night.
